Bromide Dominance Theory, blocking Iodine, causing disease?

In the 1960's, a single slice of bread in the USA contained the full RDA of 0.15 mg iodine. The risk for breast cancer was then 1 in 20. Over the last several decades, iodine was largely replaced by bromine in the form of potassium bromate in the bread making process.
Bromine blocks thyroid function and interferes with the anticancer effect of iodine. Today, the risk for breast cancer is 1 in 8 and increasing by one percent each year.

In 1990 the UK banned bromate in bread. Canada followed suite in 1994. The United States has yet to take a similar action in this important matter.

Recent research clearly demonstrates that big pharma “science” has misled doctors and the public at large about iodine. Bromide is an insidious additive used in many consumer products, and as a pesticide. Because of the sheer number of bromide-supplemented products, exposure to this man-made additive has caused a depletion of iodine in human populations. Studies in lab animals provide alarming evidence that even small amounts of bromide exposure can be toxic.
A bromide dominance condition may develop when bromide, acquired through environmental, occupational or dietary exposure, causes bromide levels in the body to rise high enough to inhibit iodine enzyme metabolism.
Where does bromide come from? Bromide comes from the food we eat—especially bread—from drinking water, and from toothpaste, mouthwash, flame-retardants, hair dye and other sources.

Got enough Vitamin P & Vitamin R?

Marc clarifies that stress (cortisol) blocks our ability to experience pleasure (Vitamin P), so relaxation (Vitamin R) while eating and digesting promotes satiety, the feeling of being full and satisfied.  In other words, the more you argue at the dinner table, or balance your checkbook during lunch, or review the kids homework, or berate yourself for being overweight during meals... the more you have to eat to satisfy the brain's idea of "Enough!"

Obesity additives... the bane of processed foods

Many of the chemicals all too commonly found in today's foods can be just as addictive as alcohol, cigarettes, and even various street drugs.

The stuff they are putting in our food to keep it artificially "fresh" for years and even decades, can actually make changes in our brain chemistry...causing us to become addicted to gaining body fat. 

Furthermore, in order to make you crave what they have, the industry spikes your food with: Trans fats, caffeine, MSG, high fructose corn syrup, artificial colors, flavoring, extra salt, and sugar. What you get is a food time bomb disguised as a healthy treat. 

No wonder we all struggle so much... 

With all of this in mind, here are three ways obesity additives work to make our bellies bulge: 

1. Two of these obesity additives interfere with a hormone called leptin that tells the brain we are full while eating. 

2. Other obesity additives add fat by changing how our bodies use the calories we eat. They do this by increasing a fat-storing hormone called insulin. When this happens, calories are converted to fat instead of being stored as "muscle energy." This leads to fat deposits in all of our trouble areas—like under the chin, the backs of the arms, the belly, and the lower body. 

3. Still other obesity additives actually make us addicted to them and cause us to eat uncontrollably. They do this by altering brain chemicals called neurotransmitters—just like a highly addictive drug does. 

A Short List of Obesity Additives to Stay Away From... 

Stripped Carbohydrates (listed as sugar, flour, enriched white flour, white flour, enriched bleached flour, enriched wheat flour, wheat flour, semolina flour, white rice, maltodextrin, glucose, high fructose corn syrup (HFCS), fructose, sucrose, dextrose, and levulose)

Artificial Sweeteners (listed as Splenda (sucralose), NutraSweet (aspartame), Sunette (acesulfame K), and Sweet ‘N Low (saccharin). The scientists believe that artificial sweeteners may “short-circuit” the body’s natural ability to sense how much it has eaten.)

Added Caffeine in soft drinks and energy drinks (a few cups of green tea or coffee each day are fine)

High Saturated Fats (also listed as partially hydrogenated oils and trans fats)

MSG (also labeled as monosodium glutamate)

Excess Alcohol (if you must, one to two drinks per week)

Excess Salt/Sodium (in chips, crackers, canned food items, pickles, various cheeses, pretzels, condiments, and salted nuts.)

Sugar Overload at the Holidays??

Sugar is everywhere around us, in every festivity such as Christmas.

It’s common for a person to consume 150 lbs of sugar in one year. The more sugar we eat, the sicker we get. Soon, sugar becomes a necessity and we do everything to get it. Many of us are sugar addicts, a socially accepted addiction.

Eating too much sugar, in different ways causes diseases such as coronary artery disease. It causes constant lower back pain as it depletes minerals in our body. Too much sugar causes us to lose minerals such as calcium, magnesium and others that are needed for good bone health.

Here is how it works
Minerals empower enzymes stored in your body. When the minerals are out of balance the enzymes can’t fully digest the food you eat. Dr. Nancy Appleton, a leading health advocate and author of numerous books and DVDs on sugar, claims “You may cause mineral imbalances by eating too much sugar”. As stated on her great documentary Sweet Suicide, “Eating too much sugar throws our minerals out of balance and this robs our enzymes the ability to break down the food into nutrients. So particles of undigested food pass through our intestinal walls to the blood stream, where they don’t belong. They body sees them as toxins and summons the immune system to send out white blood cells”. Our body is not designed to be fighting emergencies all the time!

So, if we keep consuming a lot of sugar, our blood cells simply give up. Our immune systems become depressed from fighting sugar-toxins in the blood and our body becomes toxic throughout. In this way we are leaving the door open for diseases such as diabetes, arthritis, obesity, chronic back pain, mental illness and heart disease to come in.

Sugar can even give rise to cancer, according to many doctors. Oxygen, which the body needs to have to stay healthy is reduced by depleted minerals. Without oxygen body fluids and organs become acidic and cells ferment the sugar lodged in the system resulting in cancer. Otto Warburg, Nobel Prize winner in 1930 and 1934 stated “The cause of cancer is the replacement of the respiration of oxygen in normal body cells by the fermentation of sugar”. I can "hear" you say it! “I will substitute sugar with healthy organic agave, maple syrup or honey”. Sorry! It will still have undesireable effect. They are less processed (less toxic) and assimilate slower but that’s about it. The best thing you can do is to eat less sugar, even if you eat purer and slower assimilating sugar!

Dr. [Hulda] Clark did not come out with clear guidelines on how much sugar is OK to consume, but she was adamant about securing sugar from countries other than the US. She used stevia, agave, raw sugar and maple syrup. She used sugar very sparingly. The average person eats 41 teaspoons (or 201 grams) of sugar per day. The nutritional fact boxes indicate how much sugar is in products, unfortunately though it is stated in grams when most of us think in terms of teaspoons.

Remember this: 4 grams = 1 teaspoons Max 8 grams = 2 teaspoons

Dr. Nancy Appleton warns that more than 8 grams or two teaspoons in the blood system at any given time begins affecting mineral balance and our ability to digest even healthful foods. So imagine the harmful effects of drinking an 8 oz glass of cranberry juice delivering 41 grams, more than 10 teaspoons of sugar. Now calculate how much sugar you ate for breakfast!

If you want to slow down your addiction to sugar consider chromium, to curb your appetite for sugar. Niacin may also help both your cardiovascular system and your craving for sugar.

11 foods that lower cholesterol

Changing what you eat can lower your cholesterol and improve the armada of fats floating through your bloodstream.

In with the good
Different foods lower cholesterol in various ways. Some deliver soluble fiber, which binds cholesterol and its precursors in the digestive system and drags them out of the body before they get into circulation. Some give you polyunsaturated fats, which directly lower LDL. And some contain plant sterols and stanols, which block the body from absorbing cholesterol.

Oats. An easy first step to improving your cholesterol is having a bowl of oatmeal or cold oat-based cereal like Cheerios for breakfast. It gives you 1 to 2 grams of soluble fiber. Add a banana or some strawberries for another half-gram. Current nutrition guidelines recommend getting 20 to 35 grams of fiber a day, with at least 5 to 10 grams coming from soluble fiber. (The average American gets about half that amount.)

Barley and other whole grains. Like oats and oat bran, barley and other whole grains can help lower the risk of heart disease, mainly via the soluble fiber they deliver.

Beans. Beans are especially rich in soluble fiber. They also take awhile for the body to digest, meaning you feel full for longer after a meal. That’s one reason beans are a useful food for folks trying to lose weight. With so many choices — from navy and kidney beans to lentils, garbanzos, black-eyed peas, and beyond — and so many ways to prepare them, beans are a very versatile food.

Eggplant and okra. These two low-calorie vegetables are good sources of soluble fiber.

Nuts. A bushel of studies shows that eating almonds, walnuts, peanuts, and other nuts is good for the heart. Eating 2 ounces of nuts a day can slightly lower LDL, on the order of 5%. Nuts have additional nutrients that protect the heart in other ways.

Vegetable oils. Using liquid vegetable oils such as canola, sunflower, safflower, and others in place of butter, lard, or shortening when cooking or at the table helps lower LDL.

Apples, grapes, strawberries, citrus fruits. These fruits are rich in pectin, a type of soluble fiber that lowers LDL.

Foods fortified with sterols and stanols. Sterols and stanols extracted from plants gum up the body’s ability to absorb cholesterol from food. Companies are adding them to foods ranging from margarine and granola bars to orange juice and chocolate. They’re also available as supplements. Getting 2 grams of plant sterols or stanols a day can lower LDL cholesterol by about 10%.

Soy. Eating soybeans and foods made from them, like tofu and soy milk, was once touted as a powerful way to lower cholesterol. Analyses show that the effect is more modest — consuming 25 grams of soy protein a day (10 ounces of tofu or 2½ cups of soy milk) can lower LDL by 5% to 6%.

Fatty fish. Eating fish two or three times a week can lower LDL in two ways: by replacing meat, which has LDL-boosting saturated fats, and by delivering LDL-lowering omega-3 fats. Omega-3s reduce triglycerides in the bloodstream and also protect the heart by helping prevent the onset of abnormal heart rhythms.

Fiber supplements. Supplements offer the least appealing way to get soluble fiber. Two teaspoons a day of psyllium, which is found in Metamucil and other bulk-forming laxatives, provide about 4 grams of soluble fiber.

Out with the bad
Harmful LDL creeps upward and protective HDL drifts downward largely because of diet and other lifestyle choices. Genes play a role, too — some people are genetically programmed to respond more readily to what they eat — but genes aren’t something you can change. Here are some steps you can take:

Saturated fats. One way to lower your LDL is to cut back on saturated fat. Try substituting extra-lean ground beef for regular; low-fat or skim milk for whole milk; olive oil or a vegetable-oil margarine for butter; baked fish or chicken for fried.

Trans fats. Trans fats boost LDL as much as saturated fats do. They also lower protective HDL, rev up inflammation, and increase the tendency for blood clots to form inside blood vessels. The Institute of Medicine recommends getting no more than two grams of trans fats a day; less is even better.

Weight and exercise. Being overweight and not exercising affect fats circulating in the bloodstream. Excess weight boosts harmful LDL, while inactivity depresses protective HDL. Losing weight if needed and exercising more reverse these trends.

The American Cancer Society recently asked baking and pastry students at the Culinary Institute of America to reinvent the birthday cake using better-for-you ingredients.

Alexandra Mudry won for her makeover of a red velvet cake.

The winner was a healthful twist on the red velvet cake, created by Alexandra Mudry, a former actress from Pleasantville, N.Y., who will graduate from the school in October. The recipe cuts back on the sugar, eggs, oil and butter in the traditional version, substituting roasted beets, dried cherries, applesauce and whole grain flour to boost the nutrient content. Ms. Mudry’s New Red Velvet Cake, which is filled with chocolate ganache and topped with cream cheese frosting, is now the official cake of the American Cancer Society’s “More Birthdays” campaign.

Recipes from the other four finalists include:

Chocolate Raspberry Cake: Runner-up Arthur Battistini, from Middleboro, Mass., reduced the calories and boosted the beta carotene and flavonoid content in making his chocolate raspberry cake.

Blueberry Dream Cake: Finalist Tamara King, a former banking industry worker and a native of Harrod, Ohio, made her cake with whole-wheat flour, applesauce and blueberries, which are rich in antioxidants.

Chocolate Cake: Finalist Laura Sansone, a native of Boonton, N.J., who will graduate from C.I.A. in February, created an egg-free applesauce version of the traditional favorite.

Gluten-Free Angel Food Cake: Finalist Lorraine Tran, originally from Garden Grove, Calif., created a gluten-free cake filled with a yogurt-berry mousse.

At seven cents per pound, hexane is currently the dominant extraction solvent for soy products. Whether you're eating Boca burgers, firm tofu, partially hydrogenated soybean oil, granola crumbs for texture, or Silk soy milk, hexane likely played a role in the extraction process. Hexane was formerly used as a cleaning agent for removing grease in the printing industry as well as a solvent for rubber cement, but now it's showing up in many so-called "natural" and even "made with organic" soy foods.

Organic Dairy Farmers Tell Vilsack to Crack Down on Aurora & Horizon's Factory Farm Dairy Feedlots

Last week, USDA Secretary of Agriculture Tom Vilsack spoke at the La Crosse, Wisconsin County Fair. Nearly 200 organic farmers showed up to protest. The farmers, organized by the Cornucopia Institute, rallied to convince Vilsack to take action against factory farms that are saturating the market with fake organic milk, like Aurora and Horizon (Dean Foods). One farmer shouted a question to the Agriculture Secretary, asking when the USDA will take action against organic lawbreakers. "I commit to you that we will enforce the rules," Vilsack responded. The OCA is working hard to make sure this is true.

Cattle now fed chips and chocolate...

Cheap Beef fed on Potato chips and Hershey's, yum...

As corn prices are going up, large scale factory farm operations are looking for cheaper foods to feed cattle. Cost-cutting measures like mixing reject M&Ms and potato chips with corn feed are no longer uncommon.

In the meantime, cattle ranchers raising grass-fed beef are struggling to stay in business, as more people are buying the cheap stuff. The Wall Street Journal recently released a news video on the issue.

Why eat sweet potatoes?

The deep orange-yellow color of sweet potatoes tells you that they're high in the antioxidant beta carotene. Food sources of beta carotene, which your body converts to vitamin A, may help slow the aging process and reduce the risk of some cancers. Sweet potatoes are also good sources of fiber, vitamins B-6, C and E, folate and potassium. They're fat-free and low in calorie density, meaning you can have a larger portion size without racking up the calories.

Broccoli and reversal of diabetes complications

Fascinating connection between broccoli and reversal of diabetes complications

I often glance at the online listings of journal articles that are available ahead of print. The following one from Diabetes, posted Aug. 4, 2008, went right by me:

"Activation of NF-E2-related factor-2 reverses biochemical dysfunction of endothelial cells induced by hyperglycemia linked to vascular disease."

Huh? It didn't catch my attention until the British Broadcasting Company (BBC) ran the story on Aug. 5 and translated it as: "Broccoli may undo diabetes damage."

This very interesting study looked at the phytochemical (plant compound) called sulforaphane. It seems to help produce enzymes in the body that protect blood vessels by reducing tissue damaging substances triggered by high blood sugar. Sulforaphane also seems to activate genes that regulate protective antioxidant and detoxifying enzymes.

Vascular disease is a major complication of diabetes. It leads to heart disease, stroke, damage to small vessels of the eye (blindness), kidney (failure that leads to dialysis), and circulation to extremities and possible amputation.

This isn't the first news about broccoli. In 2006, another broccoli compound was found to help boost genes that prevent damaged genetic information from being passed on to future generations of cells, thereby offering potential reduction in cancer risk.

In 2007, a nutrition study of men who had prostate cancer showed that a weekly serving of broccoli cut risk for the aggressive form of the disease by 45 percent.

In 2008, researchers found in an animal study that sulforaphane in broccoli protects the heart from damage when it is deprived of oxygen (such as what occurs when a coronary artery is blocked by a clot).

What makes the diabetes study so compelling is that it seems to actually identify mechanisms that the compound sulforaphane in broccoli trigger that may allow reversal of high blood sugar damage.

All of the studies point out the need for further research. They also point out that generous servings of vegetables and fruit (at least 5 a day) gets you going in the right direction.

So, you think you want the benefits of broccoli but don't care for it? Broccoli is a member of the Brassica group of vegetables in the mustard family. Here are "close relatives" of broccoli that you might want to include in your 5-(or more)-a-day:

  • Root vegetables — rutabaga, turnips, kohlrabi
  • Leafy vegetables — cabbage, Brussels sprouts, kale, rapini, collard greens, bok choy, napa (Chinese cabbage), mustard greens
  • Flowers — cauliflower, broccoli, broccoflower
  • Seeds — mustard seed and rapeseed (from which canola oil is derived)

Fruit Juices Block Common Drugs

Grapefruit, Orange, Apple Juices Decrease Absorption of Many Often-Used Drugs

Aug. 19, 2008 -- Grapefruit, orange, and apple juices block drugs commonly used to treat infections, allergy, transplant rejection, cancer, and high blood pressure.

In 1991, David G. Bailey, PhD, and colleagues found that grapefruit juice increased blood concentrations of the blood pressure drug Plendil to possibly dangerous levels. Grapefruit juice, they later learned, slows down a key liver enzyme that clears Plendil -- and about 40 other drugs -- from the body.

Now Bailey reports that grapefruit, orange, and apple juices decrease the absorption of several important medications:

  • The allergy drug Allegra, available generically as fexofenadine
  • The antibiotics ciprofloxacin (Cipro, Proquin), levofloxacin (Levaquin), and itraconazole (Sporanox)
  • The beta-blocker blood pressure drugs atenolol (Tenormin), celiprolol, and talinolol
  • The transplant-rejection drug cyclosporine (Gengraf, Neoral)
  • The cancer chemotherapy etoposide (Toposar, Vepesid)

"This is just the tip of the iceberg. I'm sure we'll find more and more drugs that are affected this way," Bailey says in a news release.

Bailey revealed the new findings in a report to the 236th annual meeting of the American Chemical Society.

A substance in grapefruit juice called naringin seems to be the culprit. The compound apparently blocks OATP1A2, a transporter molecule in the gut, which carries some drugs from the small intestine into the blood. Orange juice contains hesperidin, a naringin-like substance. The culprit in apple juice remains unidentified.

"The concern is loss of benefit of medications essential for the treatment of serious medical conditions," Bailey says.

In their studies, Bailey and colleagues had healthy volunteers take fexofenadine with either a glass of grapefruit juice, a glass of water mixed with naringin, or pure water. Taking the drug with grapefruit juice or the naringin mixture halved the amount of drug that reached the bloodstream.

People should take their pills only with water, advises Bailey, a professor of clinical pharmacology at the University of Western Ontario, London, Canada. He suggests that people taking medications should check with their doctor or pharmacist before taking medications with fruit juices or whole fruits.

Anti-inflammatory diets and IF Ratings


I was poking around nutritiondata.com today and discovered they include a box called an IF, or, Inflammation Factor Rating for foods. I found the concept and following explanation fascinating. The addition of this data along with a remarkable selection of nutrition facts makes this a very useful and user friendly website, worth reviewing as health and diet questions arise.

Among the many things they quantify for each food is its Nutrition Facts (just like the label on packaged foods); Glycemic Load, caloric ratio of carbs/fats/proteins, fullness factor, ratings for optimal weight loss or weight gain, nutrient balance and amino acid graphs, complete detailed nutrient breakdown of vitamins, minerals, fats, aminos, calories, carbs, fiber, and sterols.

There are lots of other useful tools on the site as well, so check it out! Today, I was curious about the nutritional value of rhubarb, a great early summer "vegetable" that cooks up so tasty in pies and compote. To maintain the low glycemic rating I sweetened it with agave syrup, and thickened it with arrowroot powder (no corn!). Be Well, Janis

May 19, 2008 Lots of questions about anti-inflammatory diets and IF Ratings

If you've been following the health news for the past couple of years, you've probably tuned into the fact that many experts (including Andrew Weil, Barry Sears, Nicholas Perricone, Leo Galland, and yours truly) recommend an anti-inflammatory diet as a way to forestall aging and disease. Over the past few weeks, I've gotten a lot of questions about the IF Ratings of various foods. For example:

Q. Whole grains are supposed to be good for you and have an overall anti-inflammatory effect on the body, but your data on, e.g., barley and oats, indicates a high inflammatory effect. Could you please explain this?

Q. Why is the IF Rating for farmed salmon (-421) so much lower then the rating for wild salmon (+901). Both are salmon. Why there is such a big difference in the IF?

Q. I don't understand why walnuts have a negative IF Rating. I've heard that they are anti-inflammatory because they are high in omega-3 fats.

Q. Can you explain why an apple would be considered an inflammatory food?


First, a bit of background on how the IF Ratings (and I) came to be part of ND:


Reinagelnew_2 I developed the IF Rating system in 2005, as a way to estimate the inflammatory and anti-inflammatory potential of foods and combinations of foods. In 2006, I published The Inflammation Free Diet Plan, a book in which I detailed how the IF Rating system is calculated and how to use it. After the book and the IF Ratings were published, NutritionData.com (with my permission) added the IF Ratings to the site as part of its food and recipe analysis. Subsequently, I was invited to be a nutrition advisor for ND.

Even before I become a member of the ND team, I was delighted to make the IF Ratings available as part of NutritionData's analysis. However, one downside of making the ratings more widely available is that they now appear without the explanatory information included in the book. All of the above questions, for example, are addressed in The Inflammation Free Diet Plan.


Let me try to clear up a few of the most common misunderstandings:

Perhaps the most common misunderstanding is that all “healthy” foods are anti-inflammatory and all “unhealthy” foods are inflammatory. It’s a little more complex than that. The IF Rating system evaluates foods according to over 20 nutritional factors, including antioxidants, fatty acid composition, glycemic load, and many other nutrients. Often a food or meal will have a combination of pro- and anti-inflammatory factors of varying strengths, and the IF Rating is able to estimate the net effect of all these factors.

As you can see from the questions above, the IF Ratings often reveal some things that don’t line up with the conventional wisdom. Nonetheless, the ratings are based entirely on the actual nutritional composition of the foods and a little investigation always reveals an objective basis for “surprising” information.


The devil is in the (nutritional) details


Folate_0408_2 In the case of whole grains, they do contain some anti-inflammatory nutrients, in particular zinc and folate. But they also contain a lot of carbohydrates, which tend to increase blood sugar, which tends to exacerbate inflammation. Likewise, the biggest contributor to the IF Rating of apples is the glycemic load, which, while not large, is still measurable. The net effect is a negative rating.

With salmon, it depends on what kind of salmon you’re talking about. Wild salmon is strongly anti-inflammatory, due in large part to its high levels of EPA and DHA, two strongly anti-inflammatory omega-3 fats. Farmed salmon, which is the majority of what is commercially sold, is also high in EPA and DHA. What most people don’t realize is that farmed salmon is also extremely high in arachidonic acid, which is the most inflammatory of the omega-6 fatty acids. This is because farmed salmon eat an artificial diet that is enriched with vegetable oils.

Not surprisingly, the difference in the diet makes a big difference in the nutritional composition of the fish. Like us, salmon are what they eat. So in farmed salmon, the anti-inflammatory benefits of the EPA and DHA are completely overwhelmed by the inflammatory capacity of the arachidonic acid. This is a critical distinction that is completely overlooked in most lists of “anti-inflammatory foods."

And finally, walnuts have a reputation for being anti-inflammatory because they are a good source of omega-3 fatty acids. While this is true, what people often overlook is that walnuts are even higher in omega-6 fatty acids. Research shows that a high ratio of omega-6 to omega-3 fats in the diet promotes inflammation. While eating walnuts increases your intake of omega-3 fats, it increases your intake of omega-6 fats even faster. Although walnuts can be a great part of a healthy, anti-inflammatory diet, eating walnuts alone will not improve the omega-6/omega-3 ratio of your diet.


Foods with negative IF Ratings are not necessarily bad for you!


As I explain in my book, the goal is not necessary to avoid all negatively-rated foods but to bring the diet into balance. Many foods with slightly negative IF Ratings, such as apples, walnuts, and whole grains, are quite healthful. In fact, it would be impossible to build a balanced diet without including foods that have negative IF Ratings.

Keep in mind that inflammation is a healthy and necessary part of the human immune response; so it makes sense that a healthy diet would include factors that support the inflammatory response. The problem is an excessive inflammatory response, driven by an excess of foods that promote inflammatory pathways.

While I believe it's wise to limit or avoid foods that are strongly inflammatory, such as french fries or farmed salmon, there's no reason to avoid wholesome foods like fruits and grains. Just aim to have the sum of all foods eaten in a day to have a positive IF Rating, so that the overall effect of the diet is anti-inflammatory.

Burgers, Fries, Diet Soda: Metabolic Syndrome Blue-plate Special


ScienceDaily (Jan. 24, 2008) — Otherwise-healthy adults who eat two or more servings of meat a day -- the equivalent of two burger patties -- increase their risk of developing metabolic syndrome by 25 percent compared with those who eat meat twice a week, according to research published in Circulation: Journal of the American Heart Association.

Metabolic syndrome is a cluster of cardiovascular disease and diabetes risk factors including elevated waist circumference, high blood pressure, elevated triglycerides, low levels of high-density lipoprotein (HDL or "good") cholesterol and high fasting glucose levels. The presence of three or more of the factors increases a person's risk of developing diabetes and cardiovascular disease.

But it's not just meat that adds inches to the waist, increases blood pressure and lowers HDL -- "it's fried foods as well," said Lyn M. Steffen, Ph.D., M.P.H., R.D., co-author of the study and an associate professor of epidemiology at the University of Minnesota.

Dairy products, by contrast, appeared to offer some protection against metabolic syndrome.

Steffen said that, "Fried foods are typically synonymous with commonly eaten fast foods, so I think it is safe to say that these findings support a link between fast-food consumption and an increase in metabolic risk factors."

The findings emerged from an analysis of dietary intake by 9,514 participants in the Atherosclerosis Risk In Communities (ARIC) study. ARIC is a collaborative study funded by the National Heart, Lung, and Blood Institute.

Unlike other researchers who have investigated relationships between nutrients and cardiovascular risk, "we specifically studied food intake. When making recommendations about dietary intake it is easier to do so using the framework of real foods eaten by real people," Steffen said.

Researchers assessed food intake using a 66-item food frequency questionnaire. From those responses, they categorized people by their dietary preferences into a Western-pattern diet or a prudent-pattern diet.

In general, the Western-pattern diet was heavy on refined grains, processed meat, fried foods, red meat, eggs and soda, and light on fish, fruit, vegetables and whole grain products.

Prudent diet eating patterns, by contrast, favored cruciferous vegetables (e.g., cabbage, radish and broccoli), carotenoid vegetables (e.g., carrots, pumpkins, red pepper, cabbage, broccoli and spinach), fruit, fish and seafood, poultry and whole grains, along with low-fat dairy.

Researchers also assessed associations with individual food items: fried foods, sweetened beverages (regular soda and fruit drinks), diet soda, nuts and coffee.

After nine years of follow-up, 3,782 (nearly 40 percent) of the participants had three or more of the risk factors for metabolic syndrome.

At baseline, participants were 45 to 64 years old -- ages at which many people gain weight.

Steffen said that weight gain over the years of follow-up might explain some of the cases of metabolic syndrome. But "after adjusting for demographic factors, smoking, physical activity and energy intake, consumption of a 'Western' dietary pattern was adversely associated with metabolic syndrome," she said.

"One surprising finding was while it didn't increase the risk of metabolic syndrome, there was no evidence of a beneficial effect of consuming a prudent diet either. I had expected to find a beneficial effect because we have seen that in other studies."

When Steffen and colleagues analyzed the results by specific foods, they found that meat, fried foods and diet soda were all significantly associated with increased risk of metabolic syndrome, but consumption of dairy products was beneficial.

The study did not address the mechanisms involved in the increased risk of metabolic syndrome seen with certain foods, but Steffen speculated that "it may be a fatty acid mechanism since saturated fats are a common link and certainly overweight and obesity are contributing to the development of metabolic syndrome." She also said more research on the relationship between diet soda and its association to metabolic syndrome is needed.

The fact that 60.5 percent of the ARIC population had metabolic syndrome at the start of the study or developed it during nine years of follow-up is troubling, researchers said.

Steffen said the study's results are clear: Too much meat, fried foods and diet soda, do not add up to a healthy life.

American Heart Association dietary guidelines for healthy Americans age 2 and older include:

* Limit saturated fat, trans fat, cholesterol and sodium in the diet.
* Minimize the intake of food and beverages with added sugars.
* Eat a diet rich in vegetables, fruits and whole-grain foods.
* Select fat-free and low-fat dairy.
* Eat fish at least twice per week.
* Emphasize physical activity and weight control.
* Avoid use of and exposure to tobacco products.
* Achieve and maintain healthy cholesterol, blood pressure and blood glucose levels.

Choose Your Food, Choose Your Mood

Food can change your mood. Avocado’s Vitamin B-6 and folic acid stimulate production of the mood-enhancing neurotransmitter serotonin. Barley’s Vitamin B-1 calms and relieves tension. Chocolate’s magic ingredients boost production of serotonin and endorphins, improving mood and dulling pain. Cold-water fish, such as salmon and mackerel, contain omega-3 fatty acids and vitamins B-6, B-12 and folic acid. These substances help fight depression.

And then there’s chicken soup, which brightens mood, calms nerves and induces restful sleep, although just how this legendary cure-all works remains a mystery. But make no mistake, today scientists are discovering what our grandmothers’ grandmothers knew all along: foods can alter your brain chemistry.

Imagine choosing one type of food to alleviate anxiety, another to bolster brainpower, and yet another to curb your urge to splurge on that donut. A new field of pioneering nutrition research, often referred to as the study of food and mood, is confirming what many of us have always suspected: what and when we eat can affect our mind and mood, the tendency to pile on pounds, and even the quality of our lives. For example, to curb the urge to splurge on that donut, you could choose instead a lower fat, sweet-fat food combination, such as graham crackers, fig newtons, or hot chocolate made with skim milk.

Here then, are some nutritional prescriptions, recommended by leading food researchers, that will help you to be the director of your emotional drama rather than merely an actor in it. And happily, they won’t pack on the pounds.

Eating carbohydrate-rich foods (breads, cereals, pasta, fruits and starchy vegetables such as potatoes, winter squash or corn) elevates serotonin levels, helping you to feel more relaxed and calm. High protein foods (nonfat dairy products such as cottage cheese, yogurt or milk; or beans, peas and nuts) have the opposite effect: They release other substances that let you think and react more quickly, or feel more alert and energetic.

“Women may be more sensitive to changes in serotonin than men,” explains Catherine Christie, Ph.D., R.D., a food-and-mood specialist in Jacksonville, Florida. “When estrogen levels fall and progesterone levels are high, serotonin levels may drop.”

Elizabeth Somer, in The Food and Mood Cookbook, provides three rules for an energizing, non-fattening breakfast.

Rule 1: Combine high-quality carbohydrates with a little protein.
Rule 2: Avoid high-sugar and high-fat breakfasts.
Rule 3: Be time savvy. Time is no excuse to skip breakfast.

Lunch, says Somer, should “supply a balance of quality carbohydrates (whole grains, starchy vegetables, or legumes) and protein-rich foods (lean meat, chicken breasts, fish, legumes or non-fat milk products).”

Choose your food, choose your mood. Now you can select foods that will power your brain, modify your moods, and in the process make you a more effective, more motivated and more contented person.

Nutrition Model Stresses Positive Experience Of Eating

The Satter Eating Competence Model, also known as ecSatter, was created by Ellyn Satter, a registered dietitian, family therapist and author of "Secrets of Feeding a Healthy Family," Kelcy Press.

Competent eaters are positive, flexible and comfortable with their eating habits and make it a priority to regularly provide themselves with enjoyable and nourishing food. They guide food intake based on the internal processes of hunger, appetite and satisfaction, and rely on the body's innate ability to maintain a preferred and stable weight. Satter observes that the eating competence model cultivates effective eating attitudes and behavior by emphasizing permission and discipline:

  • The permission to choose food you enjoy and eat it in amounts you find satisfying.
  • The discipline to provide yourself with regular and reliable meals and snacks and to pay attention when you eat them.

Being eating competent appears to mirror overall-well being, notes Satter of Madison, Wis. People with high eating competence feel more effective, are more self-aware and are more trusting and comfortable both with themselves and with other people.

"Many of us have eating problems, because as children, we are forced into eating more or less food than we need. That is traumatic. Eating becomes a mindless activity invested with conflict and anxiety, and not something to be enjoyed. To overcome those feelings, you have to ignore how you feel about eating, just eat," said Lohse.

Research by Lohse and her Penn State colleagues suggests that people with high eating competence do better nutritionally, have healthier body weights, higher levels of good cholesterol and fewer of the components of "sticky plaque," today's high-tech approach to predicting the tendency to cardiovascular disease.

According to Satter and Lohse, there are four steps to competent eating:

  • Take time to eat, and provide yourself with rewarding meals and snacks at regular and reliable times.
  • Cultivate positive attitudes about eating and about food. Emphasize providing rather than depriving; seeking food rather than avoiding it.
  • Enjoy your eating, eat things you like, and let yourself be comfortable with and relaxed about what you eat. Enjoying eating supports the natural inclination to seek variety, the keystone of healthful food selection.
  • Pay attention to sensations of hunger and fullness to determine how much to eat. Go to the table hungry, eat until you feel satisfied, and then stop, knowing another meal or snack is coming soon when you can do it again.

Blue Corn Tortilla Packs Healthy Punch

They Have Less Starch, More Protein Than White Corn Tortillas, Researchers Say

July 30, 2007 -- Fare at your local taco joint may be getting a bit more colorful. A new study shows blue’s best when it comes to packing the most nutrition into a taco shell or bowl of tortilla chips.

Researchers from the home of the tortilla, Mexico, found blue corn tortillas contain 20% more protein than their white corn counterparts. They also have less starch and a lower glycemic index (GI), which may be good news for dieters and people with diabetes.

Foods with a lower glycemic index are considered healthier because the sugar content is taken into the blood more slowly and provide a steady source of energy, while sugars in high-glycemic index foods are more likely to cause spikes in blood sugar and energy levels.

Blue Corn Better

Researcher Juan Pablo Hernández-Uribe of the Centro de Desarrole de Productos Bióticos del IPN in Morelos, Mexico, and colleagues say the blue color of the tortillas comes from anthocyanins in the corn, which are the same healthy compounds found in berries and red wine.

The study, published in the Journal of the Science of Food and Agriculture, analyzed the chemical composition of blue and white corn tortillas.

The results showed that white corn tortillas contained an average of about 75% total starch compared with 68% starch in blue corn tortillas. Blue corn tortillas also had a lower concentration of resistant or undigestible starch than white, although resistant starch increased with greater storage time among both types of tortillas compared with fresh.

Finally, researchers found blue corn tortillas had a lower glycemic index value that did not change over time, while white corn tortillas had a higher glycemic index value that also increased with storage.

Q.
I've been hearing lots of bad things about high-fructose corn syrup in foods. What is it?

A.
High-fructose corn syrup is a sweetener and preservative used in many processed foods. It is made by changing the sugar in cornstarch to fructose - another form of sugar.

High-fructose corn syrup extends the shelf life of foods and is sweeter and cheaper than sugar. For these reasons, it has become a popular ingredient in many sodas, fruit-flavored drinks and other processed foods. Check your food labels. You may be surprised by how many foods contain high-fructose corn syrup.

Some nutrition experts blame increased consumption of high-fructose corn syrup for the growing obesity problem. One theory is that fructose is more readily converted to fat by your liver than is sucrose, increasing the levels of fat in your bloodstream. But this hasn't been proved.

In addition, animal studies have shown a link between increased consumption of high-fructose corn syrup and adverse health effects, such as diabetes and high cholesterol. However, the evidence is not as clear in human studies.

Despite the lack of clarity in research, the fact remains that Americans consume large quantities of high-fructose corn syrup in the form of soft drinks, fruit-flavored beverages and other processed foods. These types of foods are often high in calories and low in nutritional value. This fact alone is reason to be cautious about foods containing high-fructose corn syrup.

To reduce high-fructose corn syrup in your diet, read food labels. Avoid or limit foods that contain high-fructose corn syrup. Some other easy tips for cutting back on high-fructose corn syrup include:

* Buy 100 percent fruit juice instead of fruit-flavored drinks.
* Choose fresh fruit instead of fruit juices. Even 100 percent fruit juice has a high concentration of sugar.
* Choose fruit canned in its own juices instead of heavy syrup.
* Cut back on soda.
